Three Milks Cake - Bizcocho de Tres Leche
9 eggs, at room temperature 1/2 cup sugar 1/2 cup flour 1/2 teaspoon baking powder 1/2 can evaporated milk 1/2 can condensed milk 1/2 cup milk 2 teaspoons vanilla extract 1/4 teaspoon cream of tartar
Cake Top: 3 egg whites, at room temperature 1 teaspoon cream of tartar 1/2 cup sugar
Separate the eggs. Mix the egg whites with the cream of tartar until they are stiff and form a soft peak. Add the sugar and mix well. Add the egg yolks and mix well again. Add the flour with the baking powder and fold. Put in a greased pan. Bake for 20 minutes at 325 °F. Let the cake cool down.

In another mixing bowl, mix the three milks with the vanilla extract. Slowly pour milk mixture over cake until it is absorbed.

Cake Top: Mix the egg whites with the cream of tartar until they are stiff and form a soft peak. Add the sugar and mix well. Pour over cake. Refrigerate the cake for at least 2 hours before serving.
Yield: 1 cake
